Let's just say I've never met a pumpkin bar I didn't like. But this recipe from my friend Kerri? It's killer.
2 cups flour
1 1/2 cups brown sugar
2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. cloves
1/4 tsp. salt
Mix Dry ingredients in bowl. Then add:
1/2 cup oil
1/2 cup apple juice
2 cups canned pumpkin
2 eggs
Beat with hand mixer until smooth. Bake in a greased and floured jelly-roll pan on 350* for 25-30min.
Frost with cream cheese frosting:
8 oz. cream cheese
1 stick of butter
dash of salt
1 Tbls. vanilla
powdered sugar and milk as needed for consistency
